Those of you who know little about cardoons are might want to have a look at the Wikipedia Cardoon Article.  In brief the plant is a thistle in the same family as the artichoke.  It sometimes goes by the names Cardi, Cardoni, or Carducci.  Cardoons are available at Wegmans grocery stories during the season surrounding Xmas.  Cardoons also make a beautiful outdoor decorative plant.  They are an annual plan but typically die back in the winter months.  Cardoons grow in warm or cold climates and have a historical signicance in that the first settlers in Jamestown, Virginia brought this plant with them from England.
